HARDNECKS
Allium sativum / sub-species ophioscorodon
The sub-species ophioscorodon contains many beautiful and uniquely-colored varieties. Hardneck varieties require that the flower stalk be snapped off when grown, so that the energy goes into producing a large bulb instead of a flower. They are generally larger and easier to peel than most softnecks, however, they don't store quite as long. Storage length varies from four to eight months from our harvest in July.

Produces large, very attractive snow-white bulbs with very large cloves that have a pink blush. An extremely hot garlic raw, but when baked becomes sweet. Excellent roasted and spread on bread.

| Romanian Red
Pastel white bulbs with pink accents that have 4 to 5 fat cloves which are fairly easy to peel. Upon eating raw, this flavorful strain peaks at medium-hot then pleasantly cascades into almost no aftertaste. Stores very well.

Originally from Kuty, Slovakia. This strain was brought over to the U.S. around 1988 by the Jurica family. It was shared with us at the Garlic and Arts Festival in Orange, MA. by Dr. Carl Jurica of Jurica Garlic in Johnstown, NY. This garlic has an outstanding flavor both raw and cooked. A true garlic flavor with no bitterness. It is easy to peel and a long keeper. It has medium-size heads with good size cloves. Also good for braiding.

| Korean Red
These deep purple-red bulbs average 4 to 8 cloves, and are also easy to peel. This type grows a small set of bulbils at the top of the stem that can be eaten or planted. A good intense flavor initially when eaten raw, then slowly builds into red-hot fire. Known for its extreme heat, this garlic is hot.

Softneck varieties are easy to grow, rarely produce a flower top, and are excellent for braiding. They generally aren't as easy to peel, but may store for up to 12 months. They produce 7 to 18 cloves per bulbs in several layers around a soft central stem.

A vigorous strain with large bulbs. Outer cloves are fat and round but irregular in shape. Bulb wrappers are pure white with occasional purple blotching. Clove skins adhere fairly tightly, which helps give long storage life. Four to five clove layers with 8 to 20 cloves per bulb. A mild garlic but with a nice lingering flavor.

| Elephant
Huge, impressive bulbs that are very mild in flavor. Elephant Garlic is not a true garlic (same genus, different species), it is actually a closer relative to the leek. It does require the flower top to be snapped off when grown. Very popular because of its diversity of uses in many dishes.
