Elephant Garlic

HARDNECKS
Allium sativum / sub-species ophioscorodon

The sub-species ophioscorodon contains many beautiful and uniquely-colored varieties. Hardneck varieties require that the flower stalk be snapped off when grown, so that the energy goes into producing a large bulb instead of a flower. They are generally larger and easier to peel than most softnecks, however, they don't store quite as long. Storage length varies from four to eight months from our harvest in July.

Music

Produces large, very attractive snow-white bulbs with very large cloves that have a pink blush. An extremely hot garlic raw, but when baked becomes sweet. Excellent roasted and spread on bread.

Romanian Red

Pastel white bulbs with pink accents that have 4 to 5 fat cloves which are fairly easy to peel. Upon eating raw, this flavorful strain peaks at medium-hot then pleasantly cascades into almost no aftertaste. Stores very well.

Hardnecks --> Rocambole Variety

Slovak

Originally from Kuty, Slovakia. This strain was brought over to the U.S. around 1988 by the Jurica family. It was shared with us at the Garlic and Arts Festival in Orange, MA. by Dr. Carl Jurica of Jurica Garlic in Johnstown, NY. This garlic has an outstanding flavor both raw and cooked. A true garlic flavor with no bitterness. It is easy to peel and a long keeper. It has medium-size heads with good size cloves. Also good for braiding.

Korean Red

These deep purple-red bulbs average 4 to 8 cloves, and are also easy to peel. This type grows a small set of bulbils at the top of the stem that can be eaten or planted. A good intense flavor initially when eaten raw, then slowly builds into red-hot fire. Known for its extreme heat, this garlic is hot.

  • Averages 55 to 65 cloves / lb.

German Red

A strong flavored strain, nicely colored, 8 to 15 cloves per bulb. Has a nice bite of hot, spicy flavor.

Chesnok Red

One of the best. A GARLICIOUS variety with easy to peel cloves. A great all-around cooking variety that retains flavor well. Bulbs average 9 to 11 cloves.

Marino

High yielding variety with consistently uniform bulbs. Generally produces six plump cloves that are easy to peel, with an excellent zesty flavor. Our best producing Italian garlic year after year.

Siberian

Unique bulbs, ranging from red to light pink in color, about 5 to 8 cloves per bulb. An excellent variety for cold climates.

SOFTNECKS
Allium sativum / sub-species sativum

Softneck varieties are easy to grow, rarely produce a flower top, and are excellent for braiding. They generally aren't as easy to peel, but may store for up to 12 months. They produce 7 to 18 cloves per bulbs in several layers around a soft central stem.

 

Softneck Braiding Mix

This unique blend of bulbs is a mixture of all of our favorite softneck garlic seed varieties to eat or for growing to make beautiful braids.

  • Colors range from white to pink to purple.
  • 1/4 lb - $4; 1/2 lb. - $7; 1 lb. and up - $13 per lb.

Please note: Garlic will not arrive ready to braid. This mix is intended to be planted and harvested to make braids.

Silver Skin

These bulbs are often irregular in shape, and very productive. A sharp bite when eaten raw, mild and sweet when cooked. Very long storage capacity.
